Question 2

       (a) State five activities that require the use of both specimens F and G in fish processing and preservation.      [ 10 marks ]

    (b) State three precautions that should be taken when using specimen G.  [ 3 marks ]

    (c) Mention two ways of maintaining specimen G.                                       [ 2 marks ]

Observation

This question was fairly attempted by the candidates.  In 2(a), most of the candidates were unable to state the activities that require the use of both specimens F(Hand gloves) and G(Knife) in fish processing and preservation.  Also, majority of the candidates could not state the precautions that should be taken when using specimen G(Knife) as required in 2b. However, in 2(c), most of them were able to mention the ways of maintaining specimen G(Knife).

The expected answers include:

2 (a)    Activities that require the use of both specimens F(Hand gloves) and G
            (Knife) in fish processing  and preservation

Gutting          -           Removal of offal/ gut/ entrails of fish
Cutting          -           Reducing fish into smaller pieces
Scaling          -           Removal of scale of fish
Cleaning       -           Washing of impurities/unwanted materials from fish
Gilling           -           Removal of gills from fish
Filleting         -           Removal of bones from fish
Slaughtering -           Act of killing fish
Trimming       -           Removal of fins
Slicing           -           Slicing into thin shreds                                                                                                                  

(b)     Precautions that should be taken when using Specimen G (Knife)
-           Do not use in cutting live fish
-           Keep away from your hand or that of others
-           Cutting should be done using cutting board or platform/table
-           Do not use knife without handle
-           Always wear protective gloves when cutting
-          Do not use rusted knife
