In this question, candidates were required to

(a) Give methods of preserving fish.

(b) In a restaurant, a customer has lodged a complaint that her beef is not well cooked. Outline in steps how the situation should be managed.

Observation

 

Many candidates that attempted questions 5(a) and (b) failed and scored low marks. The expected methods of preserving fish are: Smoking, drying, freezing, salting, fermentation, canning. The expected steps on how to manage the situation in 5(b) are: Empathize and feel concerned apologize to the customer, remove the food and return it to the kitchen, ask the customer if she wants the food replaced or choose another alternative.
