In this question, candidates were excepted to

       Explain five factors in a catering establishment that should be considered when planning   
a food fair

 

 

OBSERVATION

This question was highly attempted by candidates and they performed well too, it was one of the strengths exhibited by candidates. Majority of the candidates were able to state that herbs and spices are food additives/natural food enhancers / flavours and seasonings. Also, they stated the functions of herbs and spices such as improve colour, add variety to meals, act as preservatives, improve nutritive value of food etc. However, in 1 ( c), some candidates were unable to give the correct examples of each of herbs and spices because they were confused and gave examples of herbs as that of spices e.g thyme, basil rosemary etc. Additionally, some candidates even gave examples of food additives that are neither herb nor spice e.g. vinegar and salt.
