In this question, candidates were required to

  1.  List general service equipment found in a restaurant.
  2. State use of each of the following types of knives:
  3. Palette knife;
  4. Bread knife;
  5.  Butcher’s knife;
  6.  Filleting knife.

Observation

 

Many of the candidates that answered questions 6(a) got it wrong and scored low marks. The expected answers are:Plate dispenser ice-cream cabinet, tray stands, salad bar, menu board, sideboard, condiment stands, tables, chairs. But for question 6(b) many of the candidates that answered got it correctly and scored high marks.
