(a) State function of each of the following ingredients in sponge cake mixture (flour, sugar and egg).

(b)State the appropriate meal time for serving each form of fruit (juiced, purѐed, stewed and drink).

OBSERVATION

This question tested on the function of each of the following ingredients in sponge cake mixture (flour, sugar and egg) and state the appropriate meal time for serving each form of fruit (juiced, purѐed, stewed and drink). The ‘a’ part of the question was not well attempted by majority of the candidates. Therefore they performed woefully. The candidates write answers such as milk flour vanilla instead of Flour: Forms structure of cake/gives cake body/frame. Sugar: Sweetens the mixture and Eggs: Acts as a raising agent, Improves colour of mixture. The function were omitted and muddled by candidates while answering the question. But the ‘b’ part was well attempted and the candidate’s performance was excellently.
