Across all marking venues, question 3 was sparsely attempted by candidates and those that attempted it performed woefully.
The question required candidates to state rules to observe when making coffee and to give reasons for weak and bitter coffee. Although the topic is part of the food and beverage services, which is one of the fundamental topics in catering craft practices, and the question was clearly stated, candidates could not answer these questions.

This is a reflection of their poor knowledge of the subject, the topic seemed strange and those that managed to give any answer at all wrote off points. A possible explanation for this poor performance is that the teaching syllabus has not been fully covered by the teachers or the students have not really comprehend the topic.
