Observation

 

In 5 (a) candidates were unable to list the equipment found in a still room, many of them did not know what a still room is and misinterpreted it for a sitting room thereby listing chairs, tables as answers instead of refrigerator, hot and cold beverage making facilities, sink and draining board, dish washer etc. 

Question 5 (b) required candidates to state the mis-en-place for a dispense bar service and it was fairly attempted. From their responses, it was clear they understood that mis-en-place means preparation for service but they are yet to gain mastery of the topic as many of them could not give correct answers.
