Observation

 

Question 1(a, b & c) required the candidates to identify the types of table setting and cover, outline the procedures of formal table setting and mention the types of meals services. Majority of the candidates preformed excellently and the question was widely attempt by the candidates. They answered as follows:

(a)IDENTIFICATION OF TYPES OF TABLE SETTING.
I. Informal table setting;
II. formal table setting;
III. cover for breakfast.

(b) PROCEDURE FOR INFORMAL TABLE SETTING.
- collect every item you need for the table setting on a tray or trolley where available;
- put the napkin of the appropriate place;
- lay the table cloth on the table;
- place the place mat for each cover;
- start from outside and work in, thus cutlery for the first course is on the outside of the setting.

(c)TYPES OF MEAL SERVICES
- family service;
-plate service;
-tray service;
-buffet service.
