  2. List four conditions of fish.
  3. State four needs that customers seek to satisfy in catering industries.

 

Observation

 

 

Majority of candidates did not attempt this question and those that attempted performed poorly. In 3 (a) some candidates were able to mention the foods that are kept in the chill room such as fish, salad etc. For 3 (b), candidates did not understand that conditions of fish means the state or form of fish at different points such as at the point of sale, during preparation etc. The correct answer for this question include freshness, shelf stable/canned, frozen, dried, smoked etc., very few candidates were reported to get this answers right, this is an indication that the candidates were not taught or they could not interpret the question. Question 3 (c) was only fairly attempted, very few candidates made effort to provide some correct answers such as psychological need, social needs and convenience.
