In this question, candidates were required to
State four functions of each of the following kitchen personnel:

  1. Head Chef;
  2. Second Chef.

In question 4, due to the fact that the second chef can act as a delegate for the head chef, their roles are similar and the students could not differentiate between both roles. For example, the head chef has the overall responsibility of the organization and administration of food production operations; however, the second chef can act in these capacities when the head chef is not available. Likewise, the head chef is responsible for training of staff and the second chef can also do same when the head chef is unavailable. This question was aimed at examining the candidates’ knowledge of the slight but existing difference between those two roles but many of the candidates were unable to do justice to the question.
